GRILLED CHICKEN WITH CHIMICHURRI SAUCE

In blender...

2 cups of spinach / 1 cup of arugula / 1bunch of Italian Parsley / 1 bunch of basil / 1/2 of a red onion - chopped / 3 cloves of garlic / 1 cup of red wine vinegar / 1 cup of olive oil / 1 cup of water / 1 tablespoon of red chili flakes / 3 tablespoon of kosher salt

blend until smooth,

and enjoy!

ROASTED POTATO, ARTICHOKE & WHITE CORN SALAD IN A STONE GROUND MUSTARD VINAIGRETTE

(Start with the vinaigrette)

In a large bowl, whisk together...

1 cup of olive oil / 1/2 cup of extra virgin olive oil / 1/2 cup of stone ground mustard / 2 tablespoons of Dijon mustart / 2 tablespoons of lemon juice / 1 shallot - finely diced / some salt & ground black pepper

then add...

4 cups of roasted potatoes / 4 chopped hard boiled eggs / 2 cups of artichoke hearts / 4 ears of white corn - shucked and cut off the cob / 1/4 of Kalamata olives / 2 tablespoon of capers / 1 tablespoon of pink peppercorns / 2 bunches of watercress

toss & serve,

and enjoy!

CARAMELIZED ONION TARTS

Mix together...

3 red onions - julienne & caramelized / 1 cup of Parmesan cheese / 1 bunch of parsley - chopped / 2 teaspoons of Herbs De Provence

spread ingredients over a flat rectangle of puff pastry & cook at 400 degrees for 30 minutes or until golden brown,

and enjoy!

WATERMELON SALAD WITH PICKLED ONIONS, RICOTTA SALATA, ARUGULA & PISTACHIOS

With pickled onions in a saucepan, bring the following ingredients to a boil...

1 cup of red wine vinegar / 1 cup of water / 1/2 cup of sugar / 3 teaspoons of kosher salt / 3 red onions - julienne

let it simmer for 10 minutes, then take of the heat.

Combine in a bowl...

4 cup cubed watermelon / 1 cup pickled onions / 1 bunch thinly sliced radishes / 2 cups of arugula / 3 tablespoon of finely chopped mint / 1/2 cup chopped Ricotta Salata cheese (or Feta) / 1 cup roasted/salted pistachios

For the Lemon Vinaigrette:

1 cup olive oil / 1/2 lemon juice / 1 tablespoon Dijon mustard / Salt & pepper

toss & serve,

STRAWBERRY CHEESECAKE TARTS

(for the pie crust)

In a food processor, pulse together...

1 cup + 3 tablespoons of flour / 1 teaspoon of salt / 1 1/2 teaspoons of sugar / 3 tablespoons chilled unsalted butter,cubes

pulse until sandy & pea sized, then...

add 4 tablespoons of frozen butter cubes

again, pulse until sandy and pea sized.

Then, combine...

1/2 cup of ice water & 1 tablespoon of red wine vinegar, slowly adding the mix into the pie dough.

Add about 2/3 of the amount of mix, check the consistency , then add more if dough if it is still not together.

Wrap dough on plastic and form a disk.

Refrigerate at least one hour before rolling out.

When rolling out...

Flour a board and roll out the crust, place crust on sheet pan and cover with foil & dried

beans, then bake for 30 minutes at 400 degrees.

Remove and add filling.

(for the cheesecake filling)

In a mixing bowl, whisk...

1 pound of cream cheese / 1 cup of powdered sugar / 2 teaspoons of lemon juice & zest of 2 lemons / 1 tablespoon of vanilla extract / 3 eggs

Spread cheesecake filling over crust. Bake at 400 for 20-30 minutes or until golden brown

While baking...

slice 2 cups of strawberries and toss with juice of 1 lemon, 1/2 a cup of sugar & chopped mint.

Remove tart and spread berries.

Put in refrigerator to set up,

Serve with whipped cream,

and enjoy!
